our honey bees are an integral part of our business and its success. because they are from local stock, they have developed resilience to our specific climate and native pests, making for a healthier more robust colony. this also means they are a very non-aggressive variety, so we can work in the fields without any worry. their constant activity ensures that our flowers are thoroughly pollinated, leading to a much higher yield of beautiful, full blooms and stronger plants for our farm. as a sweet bonus, a single hive of our bees can produce an average of 60 pounds of honey each year, giving us a delicious product that is a true taste of our flowers.

from hives to honey
gathering nectar
it all starts with the forager bees, who are the little adventurers of the hive. they fly from flower to flower, sipping up nectar with their long tongues and storing it in a special honey stomach. back at the hive, they pass this nectar to the "house bees." as they pass it back and forth, they add special enzymes from their own bodies. this is what starts to turn the flower nectar into something completely different and much sweeter.

the house bees then tuck this liquid into the honeycomb cells. to make it into honey, they have to get the extra water out. they do this by fanning their wings super fast, creating a breeze over the cells until the honey gets nice and thick. this is a crucial step because it keeps the honey from spoiling. once it's just right, they cap the cell with a layer of beeswax to keep it safe.

harvesting the honey

when the time is right, we beekeepers carefully remove the frames of capped honey from the hive. we use a special tool to scrape off that layer of beeswax, which is a bit like uncorking a bottle. then we place the frames into a honey extractor. this machine spins the frames very fast, and the force of the spin pulls the honey right out of the combs and into a bucket below.

the final products
​
the honey that comes out of the extractor is pure and raw, but it might have tiny bits of wax or other hive debris in it. we strain it to get these pieces out, but we don't pasteurize it like large companies do. this means our honey keeps all its good-for-you qualities. the golden honey is then taken to create the various products we make for you to enjoy. it's a sweet reward that's a true testament to the hard work of our bees.
