at heritage hives, our passion is built around the honeybee, the botanicals, and the mead they inspire. we believe that the flowers the bees forage from are the true architects of our honey's character, and in turn, the unique taste of our handcrafted meads. since mead is, by volume, mostly honey, the variety chosen has a profound impact on the final product, much like the grapes in a traditional wine. let's uncork the magic and explore how different single-source honeys translate into the complex and delicious flavor profiles of our upcoming mead releases.
the honey-to-mead transformation
imagine biting into a strawberry versus a plum. both are sweet, but their flavors are worlds apart. honey is the same way. the blossoms a bee visits—whether it’s a field of fireweed or a patch of blackberry bushes—dictate the honey’s color, aroma, and its distinct flavor notes. when that honey is fermented, these subtle, often delicate, characteristics are amplified and transformed.
exploring varietal honey flavors
for a truly elegant experience, we turn to fireweed honey, often hailed as the "champagne of honeys." this variety is light, delicate, and sweet, with subtle hints of spice, pear, or pineapple. this clean profile is the essence of our traditional dry mead, capturing a pure, sophisticated elegance with just a touch of spice on the finish.

for a classic favorite, blackberry honey offers a smooth, rich, and long-lasting sweetness with distinct berry, and mild floral notes. this honey forms the lush, full-bodied foundation of our traditional sweet mead, where its dark fruit character is infused with notes of black tea, vanilla, and caramel.
some honeys carry unique spice notes right from the start. a personal favorite, coriander honey, is a fascinating blend of herbal, fruity, and spice notes. it offers warming tones of cardamom and ginger with a hint of lemon, balanced by surprising depth from notes of black licorice and chocolate. this naturally spiced profile is a beautiful complement to the dark stone fruit flavors of our spiced plum mead.
you'd never guess that a honey from a vegetable blossom could taste so light and sweet, but radish honey is a sweet surprise—sugary and sometimes described like rose petals or butterscotch. this honey’s light, candy-like sweetness is the perfect canvas for the light, tart rhubarb and subtle floral notes in our rhubarb & rose mead.
for a bolder flavor, we use buckwheat honey. this variety is unmistakable: robust, earthy, pungent, with rich notes of molasses, malt, dark chocolate, and sometimes plum or cherry. its deep, complex, and malty character provides the perfect dark foundation for decadent creations like our maple & vanilla and caramel apple meads, where it blends with toasted oak, rich caramel, and vanilla.

finally, sage honey is a truly unique varietal. its flavor is often described as tasting how the desert smells, with distinct, invigorating notes of pine, juniper, and rangeland herbs. this pronounced herbal character is what makes our rosemary, mint & lemongrass mead so crisp, dry, and invigorating.
beyond the honey: the art of the brew
while the honey variety lays the groundwork, the journey from honey to a finished, complex mead is an intricate craft. much like in winemaking, every decision in the meadery—from start to finish—influences the final taste and aroma.
the choice of yeast strain is critical; this tiny organism is the engine of fermentation. different strains produce different flavors—some enhance fruit, others add spice, and some are chosen specifically to achieve a smooth texture or high alcohol content. in specialty meads (melomels or metheglins), the amount and quality of fruit, spices, and botanicals used ensure the desired flavors are bright and authentic, especially when we use our own farm-grown ingredients.

we also use tannic additions to add structure and a pleasant, dry mouthfeel—that slight pucker you feel on your tongue. in mead, tannins can come from sources like fruit skins (like those from blackberries), tea, or wood (such as aging in an oak barrel). furthermore, maintaining ideal brewing conditions—including temperature and nutrient levels—ensures the yeast works happily, leading to a clean, smooth, and predictable flavor profile. finally, aging is a virtue. time mellows the flavors, integrates the honey and fruit notes, and adds a rich, full-bodied texture, especially in our more complex meads, like the maple & vanilla mead.
by balancing the core sweetness of fireweed honey with a specific yeast strain, or pairing the robust, earthy notes of buckwheat honey with complementing spice additions, we transform simple ingredients into a sophisticated drinking experience.
